Abstract

This study aims to analyze and optimize the tofu production process at Pak Ihsan Tofu Factory using the Value Stream Mapping (VSM) approach to identify and reduce waste that occurs in the production process flow. The research method used is qualitative, with data collection techniques through direct observation, structured interviews with production operators, and documentation studies. The analysis was carried out by compiling a Current State Value Stream Mapping, classifying activities into Value Added (VA), Necessary but Non Value Added (NNVA), and Non Value Added (NVA), and supported by Process Activity Mapping (PAM) to measure the time and type of activity. The results of the study showed that the greatest waste was found in waiting and inventory waste, especially during the waiting time for steam to rise and the storage of tofu before frying. Based on these results, a Future State Value Stream Mapping was designed with proposed improvements in the form of reducing waiting time, restructuring the workflow, adding operators, and standardizing the production process. After the improvements, the total process time decreased with an increase in VA activity, a increase in NNVA, and elimination of NVA. The study concludes that Value Stream Mapping is an effective and practical tool for small and medium enterprises (SMEs) to enhance operational efficiency, improve process control, and strengthen business competitiveness.
