Abstract

This study aims to analyze the role of innovation in improving operational performance at Bakery A'Choice, determine the factors that influence the decision to implement innovation, and identify the challenges faced in implementing innovation to improve operational performance. The research method used is qualitative with a case study approach at Bakery A'Choice. Data were collected through in-depth interviews and observations. The main findings show that product and process innovation contribute significantly to operational performance. Innovation decisions are influenced by the need to maintain quality, improve efficiency, market adaptation, and competition. Challenges include intense competition, changing consumer preferences, limited human resources, traditional marketing, and limited production machinery. The implication of this research is the need for investment in human resource training, utilization of digital technology in marketing, and modernization of production machinery. Recommendations include improving market research, developing a structured employee training program, and periodic evaluation of innovation effectiveness.
