Abstract

In general, Indonesian people only utilize sweet potatoes in the form of fresh sweet potatoes in processing into food ingredients. However, in the processed food and animal feed industry, yams are utilized in dry form. In general, our society in the process of drying sweet potatoes still uses traditional methods, the shortcomings of the drying process in the traditional way are the media to be dried in direct contact with environmental air that is less clean and generally requires a large area. Therefore, the technology of drying equipment that uses solar collectors using turbine ventilator aids was developed. The purpose of the study is to determine the effect of variation in the size of the ventilator turbine on the performance of the rack-type cassava dryer and the variation in the size of the ventilator turbine that has the best performance of the rack-type cassava dryer. The cassava that will be tested is 4 kg for 2 units of test equipment, each tool contains 2 kg of cassava, with ventilator turbines that will be varied in size 14, 16, and 20 inches. It turns out that the ventilator turbine has an effect on the performance of the rack-type cassava dryer, this is because the large size of the ventilator turbine does not really require strong wind gusts in accordance with its function of circulating the air in the room to the outside of the room so that the temperature in the room will decrease due to the air circulation process.
