Abstract

Business Analysis of Smoked Fish Agroindustry in Tanjung Medan Village, Tanjung Medan District, Rokan Hilir Regency, under the guidance of Mr. Hajry Arief Wahyudi, SP., M.MA. The processing of smoked fish uses raw materials caught by fishermen in Tanjung Medan Village, namely jamfish. The condition of lakes and rivers, which are currently decreasing in water quality, has caused fish populations to decrease and fish catches to decrease. Raw materials for agro-industrial businesses are also limited. Therefore, this study aims to analyze: 1) the characteristics of entrepreneurs and business profiles of the smoked fish agro-industry, 2) the use of factors of production, production technology and production processes in the smoked fish agro-industry business, 3) production costs, production, price, income , efficiency and added value obtained in the smoked fish agro-industry business. The research was conducted in Tanjung Medan Village, Tanjung Medan District, Rokan Hilir Regency from June to November 2022. The method used in this study was a survey method. Data were analyzed using descriptive statistical analysis, qualitative and quantitative descriptive analysis and using the hayami method of analysis. The results showed that: 1) the characteristics of salai fish entrepreneurs are dominant at an average age of 47.6 years, elementary and junior high school education, experience of doing smoked fish with an average of 15.5 years, and the number of family dependents with an average 3 people. The profile of the smoked fish business was originally a business idea started by looking at the activities of the smoked fish processing business in another place, then the entrepreneur tried to run the same business. The business scale is a home industry, with an individual business form. Business capital ranges from Rp. 500.000,- up to Rp. 5,000,000,-. With the number of workers between 1-2 people from within their own families, namely husband and wife. 2) The use of production factors includes raw materials; fresh jam fish. Supporting material; salt water and firewood. In production technology, the processing does not require sophisticated tools and equipment, only simple tools and equipment are enough. The production process starts from catching fresh jamis fish, then cleaning it, after cleaning it is then arranged in the smoking rack, smoking, cooling, after it is packaged and ready to be sold, the sales are taken directly by the collectors. 3) Salai fish agro-industry business has a production cost of IDR 392,401 per production process consisting of fixed costs of IDR 676 per production process and variable costs of IDR 391,725 per production process. Salai fish production produces as much as 1.82 kg per production process, an average selling price of Rp. 252,000/kg, and the net income of the Salai Fish Business in Tanjung Medan Village in one production process is Rp. 66,239 per production process with an RCR level of 1 , 17. The family work income is 455,239 per production process. The Salted Fish Business has an added value of Rp. 36,160 / kg with a value added ratio of 40 percent processing of smoked fish.
