Abstract

Mackerel crackers are side dishes that have high protein because they are made with fish-based ingredients needed by the human body to increase nutrition. This study aims to analyze 1) Characteristics of entrepreneurs, workers and traders, 2) Production technology, use of production factors, costs, production, income, efficiency and added value of the mackerel cracker agro-industry business, 3) Institutions, marketing channels, marketing costs, marketing margin, profit margin and marketing efficiency. This research was conducted from May 2022 to October 2022. This research was conducted in Keban Village, Moro District, Karimun Regency, Riau Islands Province, using a survey method. Respondents amounted to 1 entrepreneur, 10 workers and 5 retailers. Respondents were taken deliberately with the consideration of the greatest effort in the village of Keban. The results showed that the age of the entrepreneur was 49 years, the length of education was 16 years, the length of business experience was 8 years and the number of family dependents was 7 people, the average age of the workforce was 21 years, with an average education of 6 years, the length of work experience was 3 years, the number of family dependents is 1 person, the average age of the trader is 43 years, the length of education is 9 years, the length of trading experience is 4 years and the number of family dependents is 2 people. The business profile has been established for 8 years. The scale of the business is run on a small industrial scale. The number of workers used is 10 people excluding entrepreneurs. The business capital used comes from its own capital. 2) The technology uses simple machines, the equipment used is as follows: grinding machine, stove, cauldron, scales, press machine, knife, freezer. The total production cost of Rp. 974,668/production process. The production of mackerel crackers is 20 Kg/production process with a selling price of IDR 90,000/Kg. The gross income per production process received by the entrepreneur is Rp. 1,800,000/production process, and the net income received by the entrepreneur is Rp. 825,332/production process. Efficiency (RCR) is 1.85 which means the business is efficient and feasible to develop. The added value of Rp. 289,902 with an added value ratio of 80.53%. 3) In the marketing of Al-Abror mackerel crackers, there are 2 marketing channels, marketing channel I, namely entrepreneur-retailer-consumer, marketing channel II, namely entrepreneur-consumer. Entrepreneur's marketing function includes sales exchange function, physical function of transportation, processing, packaging, financing, function of risk-bearing facilities and market information, retailer may include function of exchange of sales, purchasing, physical function of transportation, financing, function of risk-bearing facility and market information. Marketing costs for channel I amounted to Rp.1,306/Kg for transportation and plastic costs, while for channel II it was Rp.2,000/Kg for plastic costs. The
