Abstract

Agro-industry has the potential to increase added value and produce marketable products, thereby increasing revenue and profit. The purpose of this study was to analyze 1. the characteristics of entrepreneurs and the profile of pineapple processing businesses in the Tunas Makmur farmer group. 2. The use of raw materials, use of supporting materials, production, production processes, production technology and use of processed pineapple labor in the Tunas Makmur farmer group. 3. Production costs, income, business efficiency, break event points (BEP) and added value of processed pineapple in the Tunas Makmur farmer group. 4. Marketing analysis includes: marketing institutions and channels, functions, costs, profits, margins, and marketing efficiency of processed pineapple in the Tunas Makmur farmer group. This research was conducted using a case study method. The population in this study were members of the Tunas Makmur farmer group who worked in the UMKM sector. The technique of determining the respondent is by census. Data analysis used descriptive qualitative and quantitative and added value using the method of Hayami. The results showed that: 1). Characteristics of entrepreneurs have an average age of 48 years, the average level of education is 11 years. Average business experience of 6 years. The number of dependents of a family of 3 people. 2). The raw materials used come from group plantations and the supporting materials used come from the Pakning River area. The technology used is modern and traditional technology, the workforce in pineapple processing is TKLK 3). The average cost of producing pineapple chips is IDR 175,540.00 / Production Process, pineapple flour chips IDR 203,350.00 / Production Process and pineapple dodol IDR 278,810.00 / Production Process. Net income of pineapple chips is IDR 242,580 / Production Process, pineapple flour chips IDR 368,483 / Production Process and pineapple dodol IDR 440,423 / Production Process. The most efficient Return Cost Ratio (RCR) for pineapple flour chips products is 2.6. BEP for pineapple chips is achieved at the sale of 1 kg with a selling price of Rp 69,139.99 / kg. BEP for pineapple flour chips is achieved at the sale of 2 kg with a selling price of Rp 57,879.25 / kg. The BEP of the pineapple lunkhead was achieved at the sale of 2 kg with a selling price of Rp 61,915.40 / kg. The best added value is obtained from pineapple flour chips of Rp. 183,972.22. 4). There are two marketing channels in pineapple processing. There are 7 marketing functions carried out. Large marketing costs are in the second round of Rp. 7,060.00. Marketing profits are on channel II Rp. 42,940.00. The marketing margin for channel II is Rp. 50,000.00. The most advantageous efficiency on channel I is 3.33%.
