Abstract

This study aims to analyze: (1) enterpreneur characteristics of entrepreneurs and the business profile of the fan-fried banana agroindustry, (2) the procurement and use of raw materials and supporting materials, production technology, production processes, and manpower of fan fried banana agroindustry, (3) production costs, production, prices. , income, efficiency, and added value of the fan fried banana agroindustry. This study uses a case study method on the Wak Saril fan fried banana agroindustry, the research site is in Pagaran Tapah Darussalam District, Rokan Hulu Regency, Riau Province. This research was carried out for 6 months from June to November 2021. The research respondents consisted of one entrepreneur and two workers who were taken by census. The data used in this study were sourced from primary data and secondary data. Data were analyzed descriptively quantitatively and qualitatively, business management analysis and value added analysis using the Hayami method. The results showed that the entrepreneur was 57 years old, had 12 years of education, 28 years of business experience, the number of dependents of the family was 3, this fan-fried banana agro-industry business was founded in 1993 with the name of the business owner named Wak Saril. The scale of the fan-fried banana agro-industry includes a home industry scale, the business capital comes from its own capital of Rp. 2,000,000, as many as 2 workers who come from within the family. The raw material for making fan fried bananas is kepok bananas. Entrepreneurs obtain raw materials for bananas by buying directly from traditional markets. The technology used is still relatively simple. The average banana raw material requirement is 18 kg/production process/day with an average price of Rp.10,000/kg. or Rp.180,000/production process/day. The average production cost is Rp. 466.105.28/production process/day. Fan fried bananas produced in one production process are an average of 24 kg. The average selling price is Rp. 40,000/kg. Gross income received is Rp. 960,000/production process/day, net income is Rp.358,023.49/production process/day, and family work income is Rp.493,894.72/production process/day, with an RCR of 1.59 and deserves to be continued . The added value obtained is Rp.26,443.03/kg of raw materials.
