Abstract

Mackerel is a commodity that has high economic value, so it needs to be managed properly so that it can produce optimally and get maximum profit. This study aims to analyze: 1) Characteristics of entrepreneurs and profiles of Tenggiri Fish Bread Crackers Agroindustry Business, 2) Use of production inputs, production processes, production costs, production, income, profit, efficiency (RCR) and break-even point (BEP) of cracker agroindustry businesses. Tenggiri Fish Bread, 3) Added value in the Agroindustry of Mackerel Fish Bread Crackers. This study used a survey method in Sari Galuh Village, Tapung District, Kampar Regency. Respondents in this research were taken by census, namely entrepreneurs and business workers of the Mackerel Fish Bread Crackers Agroindustry. The data collected consists of primary data and secondary data. Data analysis was carried out quantitatively and qualitatively, qualitative analysis was carried out descriptively, while quantitative analysis was carried out by analyzing production costs, income, efficiency, BEP, and added value of the Hayami method. The results of the research on the characteristics of the fish mackerel bread cracker agro-industry entrepreneurs have an average age of 38-47 years, the length of education of the entrepreneurs is 12 years (high school level), business experience is 3 years and an average family of 1-3 people. The profile of the mackerel fish bread cracker agro-industry business is from 2017 to the present. The mackerel fish bread cracker agro-industry is a small scale business. The stages of the process carried out by the fish bread cracker agro-industry entrepreneurs are cleaning, milling, mixing the dough, printing, frying, draining and packaging. The amount of production obtained by the fish bread cracker entrepreneur per production process is Rp. 1,881,441.30 / kg, net income of Rp. 618,558.70 / kg, gross income of Rp. 2,500,000 / kg, business efficiency (RCR) of 1.32 and BEP of sales volume of Rp. 2,500,000.00 / production process, BEP unit 18.81 Kg and BEP price of Rp. 75,257.65 / Kg.
