Abstract
Virgin Coconut Oil (VCO) is a pure coconut oil produced from fresh coconuts without chemical refining processes or high-temperature heating, resulting in high quality and functional value. The centrifugation method is one of the most effective techniques in VCO production, as it accelerates the separation of oil from coconut milk while maintaining product quality. The performance of a centrifugation machine is influenced by its transmission system, particularly the variation in pulley diameter, which determines shaft rotational speed and production time. This study aims to analyze the effect of pulley diameter variation on production time and production capacity of a Virgin Coconut Oil machine. The pulley diameter variations used in this study were ratios of 3:4 inch, 4:4 inch, 5:4 inch, and 6:4 inch. The research method employed was experimental, by observing shaft rotational speed (RPM), processing time, and the amount of VCO produced from coconut milk using a centrifugation machine. The results show that increasing the diameter of the driving pulley leads to an increase in shaft rotational speed. Higher shaft speed accelerates the separation process of coconut milk into VCO, particularly at processing times of 20 and 30 minutes. At a processing time of 40 minutes, the VCO yield for all pulley variations was relatively similar, indicating that the centrifugation process had reached optimal conditions. The highest production capacity was obtained using the 6:4 inch pulley variation with a processing time of 20 minutes. Based on the results, it can be concluded that pulley diameter variation has a significant effect on production time and VCO production capacity. However, at longer processing times, this effect becomes insignificant. The 6:4 inch pulley variation is the most optimal configuration for improving production efficiency in a Virgin Coconut Oil machine.
