Abstract

Abstract: The problem identified in the community is the low level of knowledge regarding the processing of local food ingredients into healthy, innovative, and marketable products. Based on this problem, this community service program aims to improve the knowledge, skills, and independence of the community in utilizing local resources through creative and economically valuable food processing. The method of implementing the community service activities was carried out using a participatory approach through several stages, including problem identification, socialization, theoretical training, and hands-on practice in processing local food products. In addition, interactive discussion sessions were held to facilitate experience sharing and evaluation of the participants’ practice results. This community service activity involved active community participation to ensure that the knowledge and skills gained could be applied independently after the program concluded. The results of the program showed a significant increase in the community's understanding and skills in processing local food, as evidenced by the participants' enthusiasm during practice sessions and the production of consumable products with potential market value. Furthermore, the community became more motivated to develop home-based businesses utilizing local food resources as an alternative means to improve household income. Suggestions for future community service programs include the need for ongoing assistance in product development, attractive packaging, and effective marketing strategies both directly and digitally, so that the community’s processed food products can compete in broader markets and contribute to sustainable local economic development.
