Abstract
Analysis of Tofu Agro-Industry Business in Mandiangin Koto Selayan District, Bukittinggi City, West Sumatra Province, Under the Guidance of Mrs. Assoc. Prof. Dr. Ir. Hj. Septina Elida, M.Sc Agro-industry is an agribusiness sub-system that processes raw materials or raw materials from agricultural products to create added value and provide employment opportunities. This research aims to analyze: (1) Characteristics of entrepreneurs and business profiles, (2) Use of production inputs, processing technology and production processes, (3) Production costs, production, income, efficiency and added value of tofu agro-industry businesses in Mandiangin Koto Selayan District, Bukittinggi City. The method used in this research is a survey method carried out in Mandiangin Koto Selayan District. This research was carried out from November 2023 to April 2024. Respondents in this research were entrepreneurs and all workers in the tofu agro-industry in Kubu Gulai Bancah Village. The data analysis used is qualitative and quantitative descriptive analysis and also uses the Hayami method. The research results show: (1) Characteristics of the entrepreneur, age 56 years, education level 12 years, business experience 38 years, number of family dependents 3 people. The age of the workforce is an average of 36 years, the education level of the workforce is an average of 12 years, the business experience of the workforce is an average of 3 years and the number of workers is an average of 1 person.The business profile shows: the business scale is classified as a home industry, personal business capital is IDR 5,305,000 and the number of workers is 3 people. (2) The input used consists of 50 soybeans/kg, supporting materials consist of 1 m3 of firewood, 150 liters of water, 13.2 kwh of electricity, 5 liters of diesel oil, 1 ounce of rubber binding, 1 kg of plastic. and HOK wages of IDR 86,000/per day. The technology used is still traditional, namely using a grinding machine.The tofu production process starts from the stages of washing, soaking, grinding, cooking, filtering, printing then pressing, cutting and packaging. (3) The total cost of tofu production is IDR 1.394.542/production process which produces 240 tofu at a price of IDR 6,500/per Kg. Agro-industry efficiency of 1.11 means it is feasible to develop with an added value ratio of 21.87% and an added value of IDR. 6,825/kg to product value.
