Abstract
Drying is one of the popular fish preservation methods in Indonesia and plays an important role in providing additional income for coastal residents. Catfish is a type of freshwater fish native to Indonesia. The meat of catfish has a high enough calorie content, a distinctive taste, and is tasty, so it is liked by the public. Drying is the process of removing water from a material to a humidity level that is balanced with the surrounding air and is able to prevent fungal infections. Therefore it is necessary to process fish quickly, precisely and correctly in order to maintain its quality before being sold, therefore a conservation process is needed to extend the decomposition process. The drying process using a gasification system can provide better drying quality for preserving fish. This can be done not only during the day, but also during the rainy season or at night. The catfish dryer test used three variations of air flow velocity in the heat exchanger, namely 5.6 m/s, 6.3 m/s and 7.1 m/s. the evaporated water content (Mbb) is 71% and the remaining water content (Mk) is 11.2%. the highest heating efficiency with a flow rate of 5.6 m/s with a heating efficiency of 0.19%, 6.3 m/s with a value of 0.15%, and 7.1 m/s with a value of 0.11%. A fish dryer using the hot gas produced by this gasification can dry up to 30 kg of fish in 20 hours. From the tests carried out, the best heating efficiency was obtained at a speed of 5.6 m/s, which was 0.19%.
