Abstract
Pawon Dharma pineapple tart agroindustry is one of the efforts that can be done in an effort to increase the added value of pineapple products. This study aims to analyze: 1) Characteristics of entrepreneurs and labor and business profile of Pawon Dharma pineapple tart agroindustry, 2) Production technology, raw and supporting materials, production processes, production costs, production, income and added value, 3) Formulate strategies that can be applied by Pawon Dharma pineapple tart agroindustry, 4) Alternative strategies that can be applied for the development of Pawon Dharma pineapple tart agroindustry business. The research method is a case study method on the Pawon Dharma pineapple tart agroindustry in Tenayan Raya District, Pekanbaru City, which was carried out in June 2023 - December 2023. Respondents were taken by census, namely entrepreneurs and workers. The data used are primary and secondary data. Data were analyzed by descriptive statistics. The results showed: 1) The age of the entrepreneur and the workforce are of productive age. Entrepreneurs and workers have 12 years of education. Entrepreneurs and workers have 4 years of business experience. The number of family dependents of entrepreneurs is 3 people and the average workforce is 2 people. Pawon Dharma pineapple tart agroindustry was established in 2019. The scale of the business is micro scale. The capital used comes from personal capital. The number of workers who work is 3 people including the entrepreneur. 2) The technology used is semi modern. The use of raw materials to make pineapple tarts as much as 25 kg / production process. The making of pineapple tarts starts from washing, grating, heating, preparation of dough raw materials, stirring the dough, adding dough, molding, filling jam, penoppingan, pengovenan and packaging. The cost per pineapple tart production process is Rp1,625,908.56 with a production output of 66 packs or 33 kg of pineapple tarts. Products are sold at a price of Rp42,000/pack. Gross revenue per pineapple tart production process is IDR 2,772,000.00. Net income per pineapple tart production process is Rp1,146,091.44. The added value obtained from the Pawon Dharma pineapple tart agroindustry is IDR 55,343.66 / kg of output per one production with a value added ratio of 49.91%. 3) The results of the analysis on the SWOT matrix obtained 9 strategies for the development of the Pawon Dharma pineapple tart agroindustry business. 4) Alternative strategies that are applied are increasing the quality and quantity of production to ensure production activities in maintaining and obtaining business partners supported by the availability of modern technology.
