Abstract

The root of the problem that arises from this research is the uncertainty of production in the bread-making industry, which has an erratic number of orders from consumers every day. With the existence of fuzzy logic which is one method for analyzing uncertain systems. This paper contains the use of the Mamdani fuzzy logic method in determining the amount of bread production at the Alan Bakery bakery. The problem solved is how to determine the amount of bread production using three input variables, namely demand, supply and workers. The first step in solving the problem of determining the amount of bread production using the fuzzy mamdani method is to determine the input and output variables which are strict sets. The second step is to change the input variables into fuzzy sets with the fuzzification process, then the third step is processing the fuzzy set data with the maximum method. And the last or fourth step is to change the output into a firm set by defuzzification process using the centroid method, so that the desired results will be obtained on the output variable. It can be concluded that the results of intelligent application calculations to determine the amount of bread production using the fuzzy mamdani method at the Alan Bakery bakery factory are validated according to the results of the theoretical basis.
