Abstract
Analysis of the Palm Sugar Supply Chain in Rokan Hulu Regency, Riau Province. Supervisorr. Ir. Saipul Bahri, M. Ec. Palm sugar is sugar that is commonly called brown sugar which is made from palm sap. Palm sugar is widely used by the community to make processed foods to replace white sugar, natural palm sugar is also a sugar that is good for consumption because it is made from pure palm sap. This study aims to analyze 1). Characteristics of palm sugar entrepreneurs and traders, 2). Processing, costs, income, efficiency and added value, 3). Palm sugar supply chain channel, 4) Supply chain distribution efficiency. This research was conducted for 6 months, starting from August 2021 to January 2022. This research used a survey method. Respondents amounted to 9 sap water entrepreneurs, 6 palm sugar agro-industry, 8 collectors, 6 retailers and 7 palm sugar consumers. Respondents were obtained by purposive sampling. The results showed that the characteristics of water sap entrepreneurs, palm sugar agro-industry entrepreneurs, collectors, retailers and palm sugar consumers were in the productive age group with an education level equivalent to high school (SMA) and experienced over 15 years and the number of dependents of each family was 1- 4 souls. The equipment used in producing palm sugar is still simple, such as cauldrons, buckets, sap filters, dippers, bamboo sap containers, tapping knives, scoops and sheaths. The total production cost is IDR 259,344.5/production process, with an average production of 16 kg of palm sugar with a selling price of IDR 21,000/kg. The gross income received by the entrepreneur is IDR 336,000/ production process, and net income is IDR 76,656/ production process. The efficiency of the palm sugar agro-industry (RCR) is 1.30, which means that the palm sugar business is efficient and feasible to develop. The added value obtained is IDR 3,627/kg with an added value ratio of 69.09%. There are 3 marketing channels, first: Palm Sugar Agroindustry Entrepreneurs-Resellers, Second: Palm Sugar Agroindustry Entrepreneurs-Resellers-Retailers, Third: Palm Sugar Agroindustry Entrepreneurs-Resellers-Retailers-Consumers. The marketing margin on channel I is IDR 1,000/kg with a marketing efficiency of 0.0774, the marketing margin on channel II is IDR 3,000/kg with a marketing efficiency of 0.0375, and the marketing margin on channel III is IDR 3,000/kg with an efficiency marketing of 0.0135. This means that marketing channel I is more efficient than channels II and III.
