Abstract

Analysis of the Chain Supply Typical Melayu Food in Pekanbaru City. Under the guidance of Mrs. Ir. Hj. Septina Elida, M.Si as the mentor. Traditional food is a food and drink, including snack and mixed ingredients or ingredients used traditionally, and especially has long developed in some region and processed from recipes that known from a long time by local people. This research aims to: (1) analyzing entrepreneur characteristics and melayu food business profile at Al-Mahdi outlet Pekanbaru. (2) identifying and analyzing the chain supply of bolu kemojo. (3) income and additional value business of bolu kemojo at Al-mahdi outlet. This research was implemented from July until December 2020. The method used was a survey, cases in bolu kemojo business at gerai al-mahdi outlet in Sukajadi sub-district Pekanbaru city. The data used are primary and secondary. The result in this research shown that the entrepreneur characteristic of bolu kemojo from the age aspect included productive group category with 37 years old age average, 14 years education (D2), 14 years business experience, and 2 years workers and family responsibilities for 4 people. The chain supply effect in bolu kemojo chain supply is: 1) supplier, the main raw material providers of bolu kemojo. 2) entrepreneur, management from input to output (bolu kemojo). 3) distribution, bolu kemojo selling to retail and souvenir shop in Pekanbaru. 4) consumer, last buyer of bolu kemojo. Revenues of bolu kemojo business in Al-Mahdi outlet has gross income and net income, where the entrepreneur bolu kemojo gross income is Rp675.000 and net income is Rp231.369,73. The additional value contained in the business of bolu kemojo is Rp442.000/process production. Total cost spent by bolu kemojo entrepreneur in process bolu kemojo manufacturing Rp443.630,27/process production, fixed cost Rp5.076,27/process production, raw material cost Rp45.000/process production, gross income is Rp675.000, net income is Rp231.369,73 with 1,5 RCR obtained and additional values of bolu kemojo is Rp442.000/process production.
