Abstract

Pineapple skin waste (Ananas comosus L. Merr) is left to rot, giving off an unpleasant odor, even though the pineapple skin can still be further processed into pineapple syrup and Nata de Pina. The absence of further processing is because the inhabitants of Kualu Pineapple Village, do not understand how to process pineapple skin into pineapple syrup and Nata de Pina. To overcome these problems, the following solutions are offered: (1) Providing training and technical assistance to the target and community partners for pineapple skin waste processing to be processed into Pineapple and Nata de Pina Syrup, (2) Technique for making Pineapple Syrup and Nata de Pina Syrup is directed in the form of a home industry so as to produce added value to increase household income, and (3) The technique of making Pineapple Syrup and Nata de Pina uses the simplest technique but still meets the required requirements (halal, health, aesthetic, culinary). The Implementation Method uses training techniques, practices, discussions and mentoring. Benchmarks for the success of this PkM are: Target targets and Community Partners have made Pineapple Syrup and Nata de Pina that meet the required requirements halal, health, aesthetic, culinary.
