Abstract

The sector has an important role in providing raw materials for the product processing industry (agro-industry), such as one of the 4S bread agro-industries. This study aims to: (1) analyze the characteristics of entrepreneurs and the profile of the bakery business. (2) Knowledge of the use of raw materials and supporting materials, processing technology, production processes and the use of bread labor. (3) Analyzing production costs, production, income, efficiency, and added value of bread. (4) Analyzing bread marketing efficiency. This research method was carried out using a survey method with 4S bread entrepreneurs as respondents who were carried out intentionally (purposive sampling) and 3 samples of retailers carried out in BangkoSempurna Village, BangkoPusako District, RokanHilir Regency, Riau Province. This research was conducted for 6 months, starting from July to December 2020. The results of this study indicate that the age of entrepreneurs is in the productive age group, namely 36 years, the length of education of entrepreneurs is 6 years (SD level). 5 years business experience with 4 family members. The business scale is included in the small business scale with own capital. The use of bread raw materials per production process is 50 kg with the use of supporting materials including: 10 kg butter, 10 kg sugar, 5 kg butter, 3 kg plastic packing, 1 kg developer, 1 rim label, 3 kg 2 cylinder LPG gas cylinders, 2 boxes hecter children, salt 4 packs, 10 coconuts, 2 combs of bananas, 2 kg of peanuts, 4 kg of mesesceres. The technology used is simple technology. The workforce used found 5 people with 2.41 HOK. Production carried out by employers 26 times the production process per month. The total production cost is Rp. 1,700,803 per production process. Gross income is Rp. 2,418,520 per production process and net income is Rp. 1,064,149 per production process, business efficiency is 1.42. The added value produced by 4S bread for one production process is Rp. 25,220. Furthermore, there are 2 channels, and there are 2 marketing agencies involved in marketing 4S bread, namely channel I from entrepreneurs to retailers and channel II from entrepreneurs to consumers. Channel I marketing costs Rp 85, channel II has no marketing costs. The marketing channel I margin is Rp 200 per pcs. The channel II margin does not have a marketing margin, this is because the buying price of entrepreneurs and the selling price of entrepreneurs to consumers are the same. The efficiency of channel I is 8.5%, channel II has an efficiency of 0%, this is because in channel II there are no costs incurred between entrepreneurs and consumers.
