Abstract

This study aims to determine and analyze the quality of tofu-making micro-enterprises on Jalan Purnama, Pandau Jaya Village, Siak Hulu District, Kampar Regency. The method used in this research is descriptive with a quantitative approach, while the research respondents are tofu business workers and owners as informants. After collecting data, it can be concluded that the quality of the tofu that is owned by the tofu maker on Jalan Purnama, Pandau Jaya Village, Siak Hulu District, Kampar Regency is in a fairly good category. Product performance is measured from maturity, namely not having a product brand, then from the texture indicators rated by the respondent, namely elasticity and non-destruction, reliability indicators are known that the shape and quality of tofu from manufacture, delivery to purchase are in good condition and quality, conformity to specifications regarding competitive prices and the suitability of the number of requests with delivery, the next indicator is the durability of tofu which averages 3 days, and if it is boiled and stored in the refrigerator, it reaches 7 days, then the service capability is speed and accuracy. delivery of tofu to customers as well as to the location of stalls and markets, and an assessment of the shape of tofu and the color of the tofu is good as well as the image and reputation of Pak Luthfi's tofu business which is quite well known both to customers and stalls and markets around the business location. There are several things that can be suggested, among others, to give a brand to the maturity of tofu, then increase the variety of tofu products and improve the quality of tofu by using higher quality raw materials and also increasing the means of production.
