Abstract

Sedap Bakat Business is one of the food processing businesses by processing fresh catfish into smoked catfish. With these activities, it will create a value-added product to generate profits. The purpose of this study was to analyze: (1) entrepreneurs characteristics and business profile (2) use of raw materials and supporting materials, use of technology and production processes (3) Production costs, production, price, income, efficiency and value-added of smoked catfish processing. The method used in this research was a case study, in the Sedap Bakat Business in Air Dingin Village Bukit Raya District Pekanbaru City. This research was conducted for six months starting from February 2022 to July 2022. Respondents were taken by purposive sampling with one person, namely Mr. Ahmaddin as the owner of the Sedap Bakat Business. The data obtained which sourced from primary and secondary data in the form of quantitative and qualitative data. The results of the research show (1) The age of the entrepreneur was 46 years old and the age of the workforce was 26 years, which was classified as productive age. The entrepreneur's education level was 16 years (S1) and the average education level was 10.40 years equivalent (SLTA). The entrepreneur's business experience was 12 years and the average business experience was 6.60 years, which was quite high. While the entrepreneur's family numbers are 4 persons. Business profile, Sedap Bakat Business was established in 2010 and small industry category, and was owned by individuals, the business working capital by bank loans and most employees were family namely his wife and three children’s. (2) The raw materials used are in the form of fresh catfish, the use of supporting materials in the form of firewood, plastic packing, labels, electricity. The production technology used was still simple form, the resulting production was 20 kg/production process and 240kg/month. (3) The production cost was Rp. 2,258,060/production process and Rp. 27,096,725/month, with a net income of Rp. 241,939/production process and Rp. 2,903,274/month, with an efficiency of 1.11 or 11%, which means that the Sedap Bakat Business is profitable, family work income earned was Rp. 653,439/production process and Rp. 7,841,274/month, family work income comes from wages received by employees who will later return to the Sedap Bakat Business because the labor used comes from within the family. The value-added generated was Rp. 6,798.11/Kg with a value-added ratio of 27.19%.
