Abstract

The COVID-19 pandemic has had a major impact on various economic activities, including small-scale and household agro-industry activities, namely the pineapple chip business. This study aims to analyze: (1) Characteristics of entrepreneurs and business profiles, (2) Procurement, use of raw materials and supporting materials as well as production processes, (3) Cost structure, income, profits and business efficiency, (4) Effect of the COVID-19 pandemic to production costs, revenues and profits. The research uses a mixed method (mixed method). The sampling technique used the census method. The results showed (1) Pineapple chips entrepreneurs were in the productive age group of 51 years, 9.6 years of education, 12.2 years of business experience, and 2 family dependents. Pineapple chips agroindustry in Kualu Village is classified as a home industry business located on Jl. Raya Pekanbaru KM.25, capital comes from own capital and loans, the amount of labor used in the family before the covid-19 pandemic was 1.25 (HOK/week) and labor outside the family was 2.49 (HOK/week). the covid-19 pandemic, the number of workers in the family is 0.71 (HOK/week) and workers outside the family are 0.58 (HOK/week). (2) Procurement of raw materials and supporting materials is obtained from suppliers and local traditional markets. The average number of raw materials used before the covid-19 pandemic was 25.34 kg/week and during the pandemic as much as 12.32 kg/week. The use of supporting materials before COVID-19 with units of kg/week consisted of 6.25 cooking oil, 0.25 salt, 0.13 baking soda, 10.70 small gas, 0.83 plastic. Meanwhile, during COVID-19, the use of cooking oil was 2.20, salt 0.03, baking soda 0.03, small gas 2.17, plastic 0.08. (3) The cost structure used in the pineapple chip agroindustry before and during the pandemic has changed. This change is seen from the total cost before and during the COVID-19 pandemic, a decrease of 79.82%. This change was caused by a decrease in the use of the number of factors of production by 75.74% and an increase in the price of factors of production by 39.28%, gross income before the pandemic of Rp. 1,339,741.67/week and during the pandemic Rp. 216,840.00/week, net income before the pandemic was Rp. 829,268.65/week, and during the covid-19 pandemic, Rp. -30,318.86/week. Family work income before covid-19 was Rp. 977,163.64/week and during covid-19 Rp. 71,664.20/week, the R/C value before was 2.63, and during the pandemic was 0.77. (4) The effect of the covid-19 pandemic using the Wilcoxon Match Pairs Test, at a significant level of 5%, shows that there is a significant difference between production costs, income and profits before and during the covid-19 pandemic.
