Abstract

Supply chain performance is important to do in a business. Supply chain performance assessment is useful for optimizing supply chain efficiency, between suppliers, entrepreneurs and consumers. This study aims to: 1) determine the characteristics of employers, workers and business profiles of frozen catfish fillets CV. Graha Pratama Fish; 2) analyze the added value of frozen catfish fillets CV. Graha Pratama frozen Fish; 3) know the supply chain actors frozen catfish fillets; 4) knowing the supply chain flow of frozen catfish fillets CV. Graha Pratama Fish; 5) analyze supply chain performance of frozen catfish fillets. This research was conducted in Koto Mesjid Village, XIII Subdistrict, Koto Kampar, Kampar Regency which was held for 6 (six) months from October 2018 to March 2019, using the DEA-CCR model Data Envelopment Analysis (DEA) (Charnes, Cooper & Rhodes) with internal performance, namely cash-to-cash cycle time, lead time, flexibility, and supply chain costs and external performance are standard conformity, order fulfillment, delivery performance, and revenue. The data collected consists of secondary data and primary data. The results showed that the age of frozen catfish fillet entrepreneurs CV. Graha Pratama Fish is 51 years old, 16 years of education (S1), 2.5 years of business experience, total dependents of 4 families. The average age of a worker is 33 years, the level of education is 12 years (high school), the number of dependents is 3 families. Business of frozen catfish fillets CV. Graha Pratama Fish is a fishery business that has a fishery business permit (SIUP) from the Kampar District Fisheries Service, the organizational structure consists of 1 director, 3 managers with as much as IDR 75,000,000 entrepreneur capital. The average use of raw materials in processing frozen catfish fillets is as much as 200 kg / process, at a cost of Rp. 16,300 per kg and the added value obtained is Rp. 6,391 per kg. Supply chain actors are suppliers of raw material for catfish, frozen catfish fillets, and consumers. Supply chain flows include product flow, financial flow, and information flow. The performance of the SCOR supply chain of catfish and frozen catfish fillets has generally performed well. DEA in the catfish supply chain is as many as 5 suppliers which achieve 100% efficiency in green conditions in December 2018 to January 2019. While the supply chain of frozen catfish fillets reaches 100% efficiency the green condition is obtained in January 2019. Sensitivity of cash-tocash cycle time is the most influential variable on the value of catfish supply chain efficiency and there is no sensitivity value that most influences the supply chain efficiency of frozen catfish fillets. Recommendations for improvement of the total potential improvement, namely the input variable cash-to-cash cycle time 98.78% and input costs 1.22%.
