Abstract
Shrimp paste is one of the typical Malay products using rebon shrimp as raw material which is produced in Bengkalis Regency. This study aims to analyze: (1) entrepreneur characteristics and business profiles; (2 ) production technology management, input use, costs, production, prices, income and business efficiency; (3) added value of shrimp paste product. This study used a survey method, which took place in Meskom Village, Bengkalis District, Bengkalis Regency. Respondents were taken by census as many as 2 shrimp paste entrepreneurs. The data used in this study are primary data obtained directly through interviews and secondary data. The data were analyzed descriptively qualitatively and quantitatively with the business management assistant. The results showed that: (1) The characteristics of entrepreneurs, namely the average age of 49.50 years (productive ), the level of education of 4.50 years or equivalent to SD (low ), 20 years of experience (long ), and the number of dependents of the family as many as 6 people (tall ). The profile of the shrimp paste business in Meskom Village is classified as micro-scale, with an average sales of IDR 23,350,000 per year with 5 production processes per year, business capital of IDR 9,071,500 and a workforce of 3 people. (2) Business management analysis: (a ) the production technology used is still simple and conventional; (b) Schedule of ordering rebon shrimp is carried out 1 week before production with a quantity of 750 kg / order; the average use of inputs consists of 560 kg of rebon shrimp / production process, 105 kg of salt / production process, 8.50 kg of plastic packaging / production process, and 10.88 kg of labor / production process; (c ) The average production cost is Rp. 3,621,389 / production process, of which most (46.39% ) is spent on the procurement of raw materials, namely rebon shrimp; (d) The resulting production is 233.50 kg / production process at a price of IDR 20,000 / kg; (e ) gross income earned IDR 4,670,000 / production process, while net income earned IDR 1,081,361 / production process; and (f ) efficiency (RCR ), which is 1.33, which means every Rp. 1 expense incurred resulting in a gross income of Rp. 1.33 with a profit of Rp. 0.33 and has been efficient and worth the effort. (3) The added value generated is IDR 2,136,111 / production process, with a percentage of 45.74% of the output value.
