Abstract
The Beef Skin Chips generally has a traditional production process, and the product packaging is relatively simple without any packaging labels. This study aims to analyze: (1) the characteristics of entrepreneurs and business profiles; (2) the production process and use of inputs; (3) production costs, production, revenue, and business efficiency; and (4) the added value produced in the Beef Skin Chips agroindustry. Research respondents were selected by census as many as 3 skin cracker entrepreneurs. This study uses a survey method, which was located in Tampan District, Pekanbaru City, Riau Province. The data used consists of primary data and secondary data. The research objectives were analyzed by qualitative and quantitative descriptive analysis. The results showed: (1) Characteristics of Beef Skin Chips agro-industry entrepreneurs showed that: average age 49.00 years (productive age), education level (junior high school equivalent or 8.00 years), business experience 15.67 years (high), family numbers of 5 person (medium). The characteristics of the employes indicate that: the average age was 27.86 years (productive age), 11.86 years of education level (equivalent to high school), 8.00 years of business experience (high), 1 person family number (low). The business profile shows: the Beef Skin Chips agroindustry was classified as a micro business with a sales turnover of IDR 794,760,000/year, a capital of IDR 5,923,333, and a employes of 3 persons. (2) The use of inputs consists of 92.00 kg of beef skin /production process, auxiliary materials consisting of 1.75 kg of salt/production process, 35.00 liters of cooking oil/production process, and 178.00 liters of water/production process; fuel consists of 6.33 kg LPG gas/production process, 1.27 m3 firewood/production process; 3.67 pieces of plastic packaging/production process; and a employes of 4.19 HOK/production process. The Beef Skin Chips production process consists of 9 stages of work, namely cleaning, skin scraping, boiling, burning feathers, mincing, drying, uncovering, and frying. (3) The production cost of beef skin chips was Rp. 4,161,052/production process, which consists of variable costs of Rp. 4,154,284/production process and fixed costs of Rp. 6,769/production process. The quantity of production was 29.83 kg/production process and the selling price was Rp. 185.000/kg. Gross income was Rp 5,519,167/production process and net income was Rp 1,358,114/production process. Business efficiency (RCR) was obtained at 1.33, meaning that it was profitable and feasible to operate. (4) The added value obtained from processing every 1 kg of wet beef skin was Rp. 21,588, or with a ratio of added value of 35.99% to the value of the product (beef skin chips).
