Abstract
This research is motivated by the problem of production damage that often occurs in curry tofu. This problem is due to the absence of a good quality management system in the production process. This study aims to analyze whether the production quality control process is optimal or not and the causes and damage to the tofu production process. This type of research is analytic observational by making direct observations on the object. Control of the quality standard of a product uses tools in the form of a checksheet, histogram, pareto diagram which aims to find out or calculate how often the damage occurs and to collect data during the tofu production process. provide quality control recommendations to the Pekanbaru kuring tofu factory. The results of data processing that have been done using histograms and pareto diagrams can be seen that the more dominant damage is the soft texture of the tofu. This research was conducted fifteen days of observation. Whereas the results of this study using a tool in the form of a Pareto diagram show that there are many numbers of damage occurring during the production process, therefore the suggested improvements are given to prevent future tofu damage by applying standard operating procedures (SOPs) made so that workers are able to work more. productive and the factory does not suffer a loss.
