Abstract

The availability of fish in the Riau Province can be used as raw material  for agroindustry such as agroindustry enterprises of Pak Ombak fish rendang  which produces products of rendang teri and rendang selais. The aim of this study  was to analyze for: 1) Characteristics of entrepreneur, employees and business  profiles. 2) The use of production factors, production technology and processes.  3) Analyze production cost, output, income, efficiency, and added value from  the agroindustry business rendang teri and selais. Case study methods was used,  and was conducted in Sialang Munggu Sub district, Tuah Madani district and  Pekanbaru City as well as starting from January to April 2022. Respondents were  taken by census namely one entrepreneur and three employees. The results showed  that characteristics of entrepreneur was 31 years old with 15 years of education,  and 4 family numbers. The average employees age were 41.3 years old with an  average of 12 years of education. Business profile Pak Ombak was established in  2017 and categorized as a micro business that uses its own capital (equity) and  external capital (debt). The technology used was semi-modern with the stages of  the process carried out starting from the preparation of raw materials, supporting  materials, cleaning fish, cooking fish rendang and packaging. The results showed  that the production cost of rendang teri per process was Rp 934,291.11 and rendang  selais Rp1.488.511,11. Gross income of rendang teri was Rp1,425,000 and rendang  selais Rp1.750.000. Net income rendang teri was Rp.490,708.89 and rendang selais  net income was Rp261.488,89. The efficiency of rendang teri was 1,53 and rendang  selais was 1,18. The Return Cost Ratio (RCR) value was higher than one, so it was efficient and feasible to be operated. The added value for rendang teri was Rp230.654/Kg (34,17%) and rendang selais was Rp130.344/Kg (15,33%).
