Abstract

Agro-industry is one form of business that can improve added value, absorption of labor as well as taking advantage of market opportunities and reduce the risk of food shortages. One of the agro-industries developed is tofu agro-industry. This research aims to analyze (1) the characteristics of the craftsmen and the business profile of the tofu agro-industry, (2) use of raw materials, processing technology, production processes and use tofu agro-industry workforce, (3) analyzing costs, income and efficiency, the added value of the tofu agro-industry. This research was conducted for 6 months (months December 2019 to May 2020) by survey method. Taking of respondents conducted by census on 5 tofu entrepreneurs in Koto Gasib District. The research data uses primary data from respondents' interviews with Tofu entrepreneurs, and Secondary from BPS data, then analysis of added value using the Hayami method. The results showed that age including productive entrepreneurs, namely 43 years, 10 years education level, 9 years of business experience with 2 dependents. Tofu agro-industry business profile is a small-scale industry with own source of capital. The use of soybean raw materials 38 kg / process production using supporting materials including 6 bunches of firewood / process production, gasoline 2 liters / production process, tamarind tofu 1 liter / production process and electricity Rp. 360 / production process. The total cost incurred is Rp. 396,320 / production process, gross income of IDR 725,000 / production process and net income of Rp. 328,680 / production process. Return Cost Ratio (RCR) obtained was 1.82, an added value of Rp. 1,377.02 / kg tofu and the level of profit obtained is 11.99%.
